Kallummakkaya Achar

















Ingredients :

  • Kallummakkaya : 50 No’s
  • Garlic Sliced Thinly : 3/4 cup
  • Green chilies/Kaanthari : 7 No’s
  • Ginger Sliced Thinly : 4 tsp
  • Gingelly Oil : 1  cup
  • Coconut oil:For Frying.
  • Red Chili Powder : 8 tsp  (3 tsp for frying)
  • Turmeric Powder:1/2 tsp.
  • Vinegar : ¾  cup
  • Water : 1  cup
  • Salt :For Taste
  • Mustard seed : 1/2 teaspoon
  • Fenugreeks : 1 teaspoon
  • Curry Leaves: Hand Full.

Preparation :
1            Boil Kallummakkaya in water for few minuts 5 or 10.
          Remove the meat of kallummakkaya from shel & clean very well.
3         Marinate this kallummakkaya with turmeric powder and 3 tsp chili powder and salt for 30      minutes.
4       Take some oil in a Pan and pour coconut oil and shallow fry the kallummakkaya till colour change.
5       Add Curry Leaves  Fried & Keep it aside.
6       Take the Pan and pour some gingelly oil and splutter the mustard seeds ,fenugreek  and  add  garlic& sauté ,then ginger, green chili..Add balance gingelly oil too.
7      Chili powder make like a paste with some water and add to it,again sauté.
8       Add the fried Kallummakkaya to it and sauté for 2 minutes.
9       Boil the Vinegar and 1 cup water then allow cool and add to sautéd  kallummakkaya mix.
1      Check the salt and  gravy, add if needed and store in a glass jar.                                                          NB: Image From Google.
