കോഴിക്കോടൻ ചിക്കൻ ബിരിയാണി Kozhikkodan Chicken Biriyani
Kozhikkodan Chicken Biriyani (Fried & Normal )
Here in this post I am giving you a recipe of making Kozhikkodan Biriyani , not simply but tasty.Less amount of ghee used in this
biriyani.
Ingredients:-
Chicken -500 gms.
Onion-4 medium size
Lemon-1(make juice without seeds)
Tomato-2 medium size
Ginger-1 ½ “piece
Garlic Cloves-10
Green Chillies-6 or 8(as per your spicy level)
Coriander leaves-1/2 cup (chopped)
Mint leaves-3 Tbsp (chopped)
Pepper powder-2 tsp
Turmeric poder-1/4 tsp
Chilli powder-2 tsp
Garam masala powder-2 tsp
Curd-3 Tbsp
Rose Water-Little
Saffron-1pinch mixed with milk
Salt
Ghee
Coconut oil.
NB: Make a few amount of ginger,green chilli and garlic paste(for
chicken fry),remaining ginger,garlic and green chilli crush very
well(for Biriyani Masala).
For Preparing Chicken Fry:-
Marinate the chicken with following items:-
Turmeric Powder ¼ tsp , Chilli powder 2tsp , garam masala powder ¼ tsp
,( garlic, ginger, and green chilli paste 2 tsp,salt (kai paakam).
For preparing ghee rice:-
Bardhaman or Ashraf (Kayama) or Basmati rice-3 cup
Onion-1 medium size
Cinnamon stick-3 nos
Cardamom-3
Cloves-3
Water-5 cup
Salt
Ghee.
For Garnishing
Onion-1 nos medium size
Cashew nuts, raisins- few amount.(Optional)
Preparation(Cooking).
1. Heat little ghee, roast cashew and raisins remove from pan and keep aside.
Fry the finely chopped onions in the same oil, until golden brown colour, remove from pan and keep aside.
2. Heat 3 Tbsp coconut oil and 1 Tbsp ghee in a frying pan,shallow fry
the marinated chicken until the colour of chicken piece turns light
golden. Don’t fry well. Remove from pan and keep aside for drain the
oil. Now chicken Fry is ready.
3. Heat 1 Tbsp oil and 1 Tbsp of ghee
in a heavy bottomed vessel, sauté the remaining chopped onions until
semi transparent. Add chopped tomatos, well crushed ginger garlic and
green chilli , chopped coriander leaves , chopped mint leaves, pepper
powder, garam masala,one small pinch turmeric powder, curd ,little salt
and fried chicken. Add ½ cup water and cook on low flame, covering the
vessel. Make a stir occasionally to avoid the problem of masala stick to
the bottom of vessel. When cooked well switch off fire and keep the lid
closed. Now our Biriyani Masala with Fried Chicken Ready.
4. Next
we can make ghee rice for biriyani. Wash the rice well, drain and keep
aside. Take 5 cups of water in a vessel and boil well and keep aside.
Heat 4 Tbsp ghee in a heavy bottomed vessel and add chopped onions,
cinnamon sticks, cloves, cardamoms and sauté until onion semi
transparent. Add the drained rice, previously boiled water to it. When
starts boiling put the stove mode in to low flame. When water absorbs
and holes appears on top then switch off the stove and keep the lid
closed. Now ghee rice is ready.
NB: If you have
time then you can fry the rice in ghee until changing the colour
lightly)
DUM Preparation
Take the prepared Biriyani
masala vessel and spread the prepared ghee rice over the masala without
breaking the rice.springle little garam masala over the rice, pour 1
Tbsp ghee,sprinkle lemon juice. Place some pudina (Mint) stems with
leafs over the rice.
Cover the vessel with aluminum foil paper and place a lid over it.
Place a vessel wih hot water over this . Then switch on the stove in Low flame for 15 minuts then switch off the fire.
Open this covering after 30 minuts and remove the Mint (putina) stems
.Garnish with fried cashew nuts,raisins,fried onions.Then springle 2 or 3
drops of rose water,springle few drops of saffron mixed in milk(if
available).
Mix all items very carefully without breaking rice and serve hot with puthina chammanthi,raita (eenthapazham achar)&salad .
NB: The same way you can prepare chicken biriyani without fried chicken
also,in that case you have to add few amount of ginger garlic green
chilli paste , 1 Tbsp curd, crushed putina,salt,turmeric powder(a small
pinch) and crushed coriander leaves with chicken pieces, mix well and
keep aside for 30 minuts before preparing masala.Cashew nuts and raisins don't use,if u like the real kozhikkodan style.
